PREPARATION: 10 MINTOTAL: 15 MIN
- Season the chicken breast with paprika, pepper and salt. Beat slightly with the rolling pin to be thinner.
- In a large pan with some olive oil and put the pieces of the peppers and fry them.
- Slice the chicken breast.
- Place the couscous in a bowl.
- Make an infusion with a teaspoon of the Peppermint Infusion and add boiling water and allow to stand for 5 minutes. Pour over couscous to absorb all the liquid. Separate the grains with a fork.
- In the food processor grind the coriander, chilli and spinach. Peel the mango and cut it into cubes.
- Plate up the couscous on a big platter and over it the grounded mix and season it with olive oil. Place the watercress, the peppers, mango, chicken, and the remaining part of the coriander and the cheese into small cubes. A real delight.
