Ice-cream with Fig Jam and Walnuts

- On a pan, put the sour cream and the milk. Meanwhile, whisk the egg yolks with the sugar.
- Place the two mixes together in the pan, and keep mixing until it gets to a maximum temperature of 85ºC (use a thermometer), avoiding that egg yolk starts to curd.
- Take the mixture off the heat and pass it by a strainer. As soon the mixture start to cool down, add the fig jam, the walnuts and cinnamon and place it on the ice-cream machine, following its instructions.
- Serve the ice-cream with fresh figs, crumble and chopped walnuts.
