Healthy Pumpkin Pancakes with Pumpkin Jam and Almonds

- On a bowl mix together all the liquid ingredients (save 1 teaspoon of the coconut oil).
- On a different bowl mix the solid ingredients really well. When they are mix together, slowly add them to the liquid ingredients, without stop whipping.
- Let the dough rest about 15 minutes or over the night.
- Put the remaining coconut oil on a hot pan. Place some spoons of the dough on the pan and let it cook on both sides until it is golden-brown.
- Serve them with the Pumpkin Jam with Almond and add more toasted almonds and cinnamon on the top.
